Keto Peanut Butter Chocolate Chip Cookies

Ingredients
  • 5 Tbsps (70g) Natural Peanut Butter
  • 1 Tbsp (14g) Melted Coconut Oil
  • 1 Large Egg
  • 1 Tsp Vanilla Extract
  • 1 Cup (112g) Almond Flour
  • 3 Tbsps (42g) Confectioners Swerve
  • 1/4 Cup Ross Stevia Chocolate Chips
  • 1/2 Tsp Baking Soda
  • 1/4 Baking Powder
  • 1 Tbsp Gelatin
  • Pinch of salt
Steps
  • Preheat your oven to 325 Degrees on convection setting
  • Add all of the liquid ingredients into a large bowl and mix with a spatula
  • Add all of the dry ingredients into the same bowl and mix all of the ingredients with a spatula until a batter starts to form
  • Line a baking sheet with parchment paper
  • Use a Cookie Scoop and place 12 equal sized scoops on the baking sheet
  • Bake the cookies for around 10 minutes
  • Let them cool down for 5 min on the baking sheet and then place them on a wire rack to completely cool before eating.
  • Once they completely cool down and set they’ll become firm and a little chewy.

  • Add some small peanut chunks to the batter to make the cookies more nutty
  • Each cookie has 137 calories
